Wilted spinach. Put the tea kettle on, then wash your spinach well. Place spinach in a heat-resistant colander. Is your water boiling? Pour the water slowly over the spinach, making sure that the hot water comes in contact with all the leaves. Use a spoon or your hands to press the spinach against the side of the colander, squeezing out extra moisture. Dress with butter or olive oil, lemon juice, and salt and pepper.
